It's fall! Hooray! I can't resist the temptation to cook and bake and candy-make like a madwoman once the weather cools and those leaves start changing colors. One of my favorite fall foods is soup. I love soup. It's so warm and comforting... and delicious! All respect to Campbell's, but nothing in a can beats homemade chicken noodle soup with homemade noodles. Hungry for some head-to-toe, soul-warming soup yet? Here's my recipe:
Chicken Soup with Homemade Noodles:
Soup:
Two boneless, skinless chicken breasts
Water (fill your soup pot 3/4 full)
2 stalks celery, thinly sliced
2 potatoes, cubed
1 can corn, drained
1 carrot, sliced
1/2 onion, finely chopped
1 Tbsp. minced garlic
2 cubes chicken bouillon
salt and pepper to taste
noodles (recipe below)
Noodles:
2 cups flour
1 tsp. salt
1 tsp. baking powder
2 eggs, beaten
1/4 c. water
Boil the chicken breasts in the water seasoned with the bouillon cubes. Once the chicken is done, remove it from the pot; place it on a cutting board so it can cool enough to handle. (the chicken, not the pot... you want to keep that on the stove... with the broth comfortably boiling... sheesh, that just doesn't sound right, but we'll let that one go and move on.) Add the vegetables and the remaining seasonings to the broth in the pot. Now, make your noodles. Combine the flour, salt and baking powder. Add the eggs and up to 1/4 c. water. Once the dough is formed, roll it out as thinly as you can on a lightly floured surface then cut it into noodles. (Hint: These noodles swell when they cook. Like your feet the day after eating too much salty fair food... ok, forget the swollen feet thing... that's not what you should be thinking about right now... back to the delicious soup that has nothing to do with feet.) Shred/dice (whichever you prefer) the chicken and add it to the soup in the pot. Once the potatoes are almost finished, add the noodles. Let the soup boil until the noodles are cooked... about 20 minutes if you cook on high like I do. Add more salt and pepper if you feel so inclined. And now? Enjoy!
**Hint: I use a pizza cutter to cut the noodles... it's fast and easy to clean. One day I will have a noodle roller/cutter... but until then a pizza cutter does just fine.
**Hint: Try adding a sprinkle of lemon pepper to this soup while it's cooking. It really takes the flavors to a new level.
